NAANKHATAI


 Hi friends....today we would make Nankhatai...an indian biscuit recipe. It is very famous and a regular snack at tea time.



 

                                                                   


Serves : makes around 15 pieces
Baking time : 15-20 mins
preparation time : 15 mins

INGREDIENTS:
  • Refined all purpose flour (maida) - 140gm
  • Purified butter (ghee) or butter -- 120gm
  • Powder sugar -- 100 gm
  • Chickpea flour (besan) -- 50 gm
  • Semolina (soozi) -- 50 gm
  • Baking powder - 1 tsp
  • Crushed green cardamom  --6

 Note : Preheat oven at 170c for 10 mins. 
             Knead  the dough with ghee only. 

 METHOD:
  • Blend purified butter and sugar in a mixing bowl. Blend it until it becomes white and creamy.
  • Sieve all purpose flour, semolina , baking powder and chick pea flour in a separate bowl.
  • Now mix this dry ingredient in the wet ingredient. Add it in small quanitity and mix it well. Don't over blend it, we want to make a dough of this.
  • Make  a soft dough. 
                                                           

  • Make small balls from the dough and place them on the greased baking tray.
                                                                   

  • Make a small cross cut with knife on these balls. 
  • For garnishing put some pistachio on top or whatever dry fruit you want to use.

  • Put the baking tray in the pre heated oven and let it bake for 15-18 mins at 170c. Keep an eye on it as soon as it turns slight brown take the tray out.
Note:
  • For preheating switch on both rods.
  • The dough should be soft, else it will not take the correct shape.
  • Purified butter should be on room temperature.
