EGGLESS DARK CHOCOLATE WALNUT CAKE






Ingredients:
  • Maida (All purpose flour) : 1 1/2  Cup
  • Coco powder : 3 tbsp   ( cadbury cocoa powder, don't mix it with chocolate powder)
  • Baking soda : 1/2  tsp
  • Baking powder : 1 tsp
  • Refined oil : 5 tbsp
  • White vinegar : 1 tbsp
  • Vanilla extract : 1 tsp
  • Cold milk : 1 cup
  • Melted dark chocolate : 1 tbsp (Brand : Morde dark compound co d16)
  • Powder brown sugar : 1 cup (Blue bird  Demerara Sugar)
  • Salt : 1/2 tsp
  • Walnuts : 1/2 cup (small chopped pieces)
Note : Start oven, set it on 180 °c. By the time we would get done with the cake preparation oven would get pre heated.

Method :


  • To melt the dark chocolate put it in microwave for 20 secs.
  • In a mixing bowl add refined oil, sugar and  milk. Mix it until the sugar dissolves. After that add vanilla extract and melted dark chocolate. Mix it with hand blender...if you don't have hand blender you can do it with spoon also.
  • In another mixing bowls shift all the dry ingredients ( maida, baking powder, cocoa powder, salt) .....mix this and sieve this.
  • Now mix the wet and dry ingredient together with the hand blender until there are no more lumps. At last add vinegar and walnuts to the mixture and mix it well. The batter should be pouring  consistency. 
  • pour batter into the greased baking pan. Use unsalted butter or oil to grease the pan. Fill till half of the pan with cake batter.
  • Put this in the pre heated oven and bake at 180 °c for about 35 mins. Put the cake in the middle rack of OTG oven and switch on the bottom element only.
  • Depending on the make of OTG oven you would need to check the cake repeatedly and repeat around 5 mins cycle. 
  • To check whether cake is ready use a tooth pick and poke the cake. If it comes out clean cake is ready.
  • Once you cake is ready remove pan from oven and keep it aside to allow it cool by itself for frosting. Don't put it in fridge, let it cool by itself.
Prepare Chocolate frosting for cake:

Ingredients: 
  • Amul cream : 1 cup
  • Butter : 4 tbsp
  • Icing sugar : 1/2 cup (Blue bird icing sugar)
  • Melted dark chocolate : 1/2 cup (Brand : Morde dark compound co d16)
  • Coco powder : 1/2 cup
  • Vanilla extract : 1 tsp
Method :


  • In a saucepan melt butter on medium heat keep stirring it while adding  icing sugar and cocoa powder in the pan so that lumps are not formed.
  • Mixture should be thick and crumbly, slowly add cream and keep stirring until sugar is dissolved and mixture is smooth. Do not boil. 
  • Turn off the stove and add vanilla extract. Mix well and shift frosting into a different bowl and allow it to cool completely. Refrigerate the mixture for around 10 mins.
  • Apply the frosting paste on the cake, decorate with chopped almonds and walnuts. You can decorate with some grated chocolate also. Use appropriate chocolate as per your taste (for some people direct dark chocolate is pretty bitter, so use chocolate with less cocoa ).
  • If your frosting is extra you can refrigerate and eat it for a week.

How to serve : 


  • Refrigerate and serve cold.
  • microwave the cake with the some more frosting chocolate....just microwave enough to melt the frosting and warm up the cake. Serve with a scoop of vanilla ice cream or chocolate ice cream. We love it this way :)
